WAY OF LIFE
FORAGING
Driving around you will see people bent over foraging for "horta" ('amaranth, dandelions, endives, nettles and spinach'). These wild mountain greens are rich in antioxidants, have very few calories and are delicious when steamed and anointed with olive oil and lemon juice.
Whilst out walking you also find nuts (chestnuts, walnuts and almonds) that have fallen from trees; fruits (pears, figs and pomegranates) and the herbs (sage, thyme, basil, oregano and mint) responsible for the delicious smells that emanate from traditional kitchens.
